Chicken and Rice with Peppers

Ingredients

- 2 cups rice
Protein
- 500 g chicken breast, cut into bite-sized pieces
Vegetable
- 2 units bell peppers, sliced
Instructions
- Heat a large skillet over medium heat. Add the chicken pieces and cook until browned, about 5-7 minutes.
- While the chicken is cooking, rinse the rice under cold water until the water runs clear.
- Once the chicken is browned, add the sliced bell peppers to the skillet and sauté for another 5 minutes until softened.
- Add the rinsed rice to the skillet along with 4 cups of water. Bring to a boil, then reduce the heat to low and cover.
- Cook for about 20 minutes or until the rice is tender and has absorbed the water. Fluff with a fork before serving.
