Ingredients

Grain

  • 2 cups rice

Protein

  • 500 g chicken breast, cut into bite-sized pieces

Vegetable

  • 2 units bell peppers, sliced

Instructions

  1. Heat a large skillet over medium heat. Add the chicken pieces and cook until browned, about 5-7 minutes.
  2. While the chicken is cooking, rinse the rice under cold water until the water runs clear.
  3. Once the chicken is browned, add the sliced bell peppers to the skillet and sauté for another 5 minutes until softened.
  4. Add the rinsed rice to the skillet along with 4 cups of water. Bring to a boil, then reduce the heat to low and cover.
  5. Cook for about 20 minutes or until the rice is tender and has absorbed the water. Fluff with a fork before serving.
