Mussels with Sweet Peppers
A delightful dish featuring fresh mussels cooked with vibrant sweet peppers for a burst of flavour.

Ingredients

- 125 ml white wine (optional)
Condiments
- 2 tbsp olive oil
- 2 cloves garlic, minced
Seafood
- 500 g mussels, cleaned and debearded
Vegetables
- 2 whole sweet peppers, sliced
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced sweet peppers and cook for 5 minutes until they begin to soften.
- If using, pour in the white wine and let it simmer for 2 minutes.
- Add the cleaned mussels to the pot, cover, and cook for 5-7 minutes until the mussels open.
- Discard any mussels that do not open and serve the dish hot.
